Package-Free Plant-Based Banana Bread & Chocolate Chip Cookie Recipes

Original Banana Bread Recipe – Makes 1 Batch

Let’s be honest, banana bread has its roots in upcycling. Trying to find a use for those frozen bananas that have been sitting in your freezer for…who knows how long really? Pairing those sweet bananas with our upcycled barley flour, a core ingredient in our banana bread mix, is a match made in heaven. Who knew they were meant to be upcycled together?

Ingredients

  • 1½ cups (298g) of Susgrainable’s Banana Bread Mix
  • 1/3 cup (80 ml) of Melted Butter
  • 2 Eggs
  • 3 Large Bananas

Elevate the taste of your banana bread by adding nuts or chocolate chips. You may also wish to add seasonings such as nutmeg or cinnamon.

Making Your Banana Bread

  1. Preheat your oven to 350℉ (176℃).
  2. Mix all of your ingredients together in a bowl until smooth.
  3. Grease a loaf pan and pour your batter into it.
  4. Bake for 45-55 minutes. To test that the loaf is completely baked, poke a toothpick into the centre. If the toothpick comes out clean, your loaf is ready.

Plant Based Banana Bread Recipe – Makes 1 Batch

Here are some of our favourite plant-based egg substitutes for your banana bread recipe! We recommended and most commonly use the bolded alternatives. Each serving listed below is equivalent to using only 1 egg in your recipe.

  • Chia Seeds: 1 tbsp Chia Seeds + 1/3 cup of Water
  • Ground Flax: 1 tbsp Ground Flax + 3 tbsp Water
  • Nut Butter: 3 tbsp Peanut Butter
  • Agar Agar: 1 tbsp Agar Agar + 1 tbsp Water
  • Soy Protein: 1 tbsp Soy Protein Powder + 3 tbsp Water

Going plant based? Here are some butter alternatives for our plant-based and vegan friends! Swap out 1 cup of butter with any of the alternatives below.

  • 1/2 cup Coconut Milk - Best for cookies and baked goods!
  • 1/2 cup Vegetable Oil – A neutral taste oil like canola oil works better than olive oil.
  • 1 cup Prune Puree
  • 1 cup Coconut Oil
  • 1 cup Apple Sauce

 

Original Chocolate Chip Cookie Recipe – Makes 1 Batch

Ingredients

  • 370g of Susgrainable’s Chocolate Chip Cookie Mix
  • 1 Egg
  • 1/2 cup (125 ml) of Room Temperature Butter

Making Your Chocolate Chip Cookies

  1. Preheat your oven to 350℉ (176℃).
  2. Mix all of your ingredients together in a bowl, until a soft dough forms.
  3. Form cookie dough into balls 1 inch in diameter.
  4. Place cookie dough balls on baking sheet.
  5. Press dough in ½ inch pucks.
  6. Bake for 15 minutes or until edges begin to brown.
  7. Let your cookies cool and enjoy!
