Apple Crumble Pie with Susgrainable Barley Flour Crust

Recipe for Apple Crumble Pie with Susgrainable Barley Flour Crust

Ingredients

  • Pie Crust
    • 1 1/4 cups flour
    • 1/4 cup Susgrainable flour
    • 2 tsp sugar
    • 1/2 tsp cinnamon (optional)
    • 1/2 tsp ginger (optional)
    • 1/2 cup oil
    • 3 tbsp cold milk (dairy or alternative)
  • Apple Crumble Filling
    • 1 (9 inch) deep dish pie crust
    • 5 cups apples - peeled, cored, and thinly sliced
    • 1/2 cup white sugar
    • 3/4 teaspoon ground cinnamon
    • 1/3 cup white sugar
    • 3/4 cup all-purpose flour
    • 6 tablespoons butter

Instructions

For the Pie Crust

  1. In a bowl, mix together the flour, Susgrainable flour, sugar, cinnamon, and ginger.
  2. In a liquid measuring cup, whisk together the oil and cold milk until well blended.
  3. Pour the liquid into the dry ingredients and mix until combined. Reserve about 1/2 cup of the mixture.
  4. Press the remaining mixture into the bottom and up the sides of a pie pan, ensuring uniform thickness. Set aside.

For the Apple Crumble Filling

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the apple slices in the unbaked pie shell. Mix 1/2 cup sugar and cinnamon; sprinkle over the apples.
  3. Mix 1/3 cup sugar with the flour; cut in the butter until crumbly. Spoon the mixture over the apples.
  4. Bake in the preheated oven until the apples are soft and the top is lightly browned, about 40 minutes.
