Brown Butter Tahini Barley Blondies

Recipe for Brown Butter Tahini Barley Blondies

Ingredients 

  • 255g unsalted butter
  • 105g all-purpose flour
  • 85g Susgrainable barley flour
  • 1 ¾ tsp baking powder
  • ¾ tsp Morton kosher salt
  • 285g light brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 150g white chocolate chips
  • 3 tbsp tahini
  • Sprinkle of flaky salt 

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9-inch round cake tin or an 8-inch square cake tin.
  2. In a small saucepan, add the butter and heat over medium heat for about 8 minutes until the butter foams and brown solids form at the bottom. Scrape all the butter and brown caramelized solids into a mixing bowl and allow to cool to room temperature.
  3. Add the brown sugar to the butter and whisk together.
  4. Add the eggs one at a time to the butter and sugar mixture, whisking together with the vanilla extract.
  5. Add the all-purpose flour, Susgrainable barley flour, baking powder, and kosher salt to the wet mixture and fold in.
  6. Fold in the white chocolate chips.
  7. Pour the batter into the lined baking tin and add dollops of tahini. Swirl the tahini with a knife and sprinkle flaky salt on top.
  8. Bake in the oven for 45-50 minutes.
  9. Once cooled, place the blondies in the fridge for the best chewy texture. Enjoy!
