Homemade Upcycled Barley Flour Crackers

Recipe for Spent Grain Crackers with Upcycled Barley Flour
Ingredients:
- 1 cup (128g) all-purpose flour
- 1/3 cup (39g) Susgrainable flour
- 3/4 tsp sea salt
- 1 tsp baking powder
- 4 tbsp (57g) unsalted butter, cold
- Scant 1/2 cup (110g) milk
- Toppings: olive oil, sea salt, parmesan, herbs
Instructions:
- Preheat the oven to 375°F (190°C).
- Mix the dry ingredients (all-purpose flour, Susgrainable flour, sea salt, and baking powder) in a bowl.
- Work in the cold butter until the mixture looks like wet sand (this can be done by hand or with a food processor).
- Gradually add the milk and stir until the dough comes together. Knead the dough for about 1 minute until smooth.
- Divide the dough in half and pat each half into rectangles. Wrap in plastic wrap and rest for 30 minutes.
- Roll out the dough between two sheets of parchment paper to about 1/15 inch or thinner (approximately 16” x 8-10”).
- Cut the dough into 1-2 inch squares. Spray with water and apply your choice of toppings (parmesan, herbs, sea salt) and gently press them in to adhere.
- Bake on parchment at 375°F for 12-15 minutes, or until crispy.
- Cool on a rack and enjoy.
