Homemade Upcycled Barley Flour Crackers

At Susgrainable, we’re passionate about turning nutritious barley grains, often discarded by craft breweries, into our upcycled barley flour. These crackers, made with our unique flour, are a perfect example of sustainable and delicious snacking. 

In our "Not a Baker" series, join Ben as he tackles barley flour recipes with no baking experience, navigating the process without any outside assistance. These spent grain crackers were an interesting experiment for Ben, and they turned out crisp and tasty! Watch Ben bake it here! 

Recipe for Spent Grain Crackers with Upcycled Barley Flour

Ingredients: 

  • 1 cup (128g) all-purpose flour 
  • 1/3 cup (39g) Susgrainable flour 
  • 3/4 tsp sea salt 
  • 1 tsp baking powder 
  • 4 tbsp (57g) unsalted butter, cold 
  • Scant 1/2 cup (110g) milk 
  • Toppings: olive oil, sea salt, parmesan, herbs 

Instructions: 

  1. Preheat the oven to 375°F (190°C). 
  2. Mix the dry ingredients (all-purpose flour, Susgrainable flour, sea salt, and baking powder) in a bowl. 
  3. Work in the cold butter until the mixture looks like wet sand (this can be done by hand or with a food processor). 
  4. Gradually add the milk and stir until the dough comes together. Knead the dough for about 1 minute until smooth. 
  5. Divide the dough in half and pat each half into rectangles. Wrap in plastic wrap and rest for 30 minutes. 
  6. Roll out the dough between two sheets of parchment paper to about 1/15 inch or thinner (approximately 16” x 8-10”). 
  7. Cut the dough into 1-2 inch squares. Spray with water and apply your choice of toppings (parmesan, herbs, sea salt) and gently press them in to adhere. 
  8. Bake on parchment at 375°F for 12-15 minutes, or until crispy. 
  9. Cool on a rack and enjoy.
